The specimen

Chips cut from the inner bark of true cinnamon — Cinnamomum verum, grown in the wet southern belt where the trade began. Ceylon cinnamon is not cassia. It is thinner, paler, layered like paper, and it tastes of flowers and citrus rather than heat. You can break it by hand. One hundred grams, packed in a resealable kraft pouch at the point of cutting.

Brewing ritual

Simmer a few chips in milk or water for ten minutes for a soft, sweet infusion. For cooking, add the chips early and let them steep; they give up their oils slowly and never turn a dish bitter.

This is the real cinnamon — thin, brittle curls that snap between your fingers, nothing like the thick bark sold in supermarkets. I drop two chips into black coffee every morning and the aroma is extraordinary.
