The specimen

Whole peppercorns from vines grown on living support trees in the Matale district, picked by hand when the first corns turn red. Sun-dried on woven mats, never machine-dried, which keeps the volatile oils that give Ceylon pepper its bright, almost fruity heat instead of a flat burn. One hundred grams, resealable kraft pouch.

Brewing ritual

Grind at the table, never before. A few turns over a cup of lotus or cinnamon tea is an old island habit and a good one.
