The specimen

Rich magenta-red petals, dried whole with their stamens intact. The deepest coloured of our lotuses, and the most tannic — a cup the colour of weak wine, with a dry, almost tea-like finish. Each pouch is a single harvest, labelled with the month it was gathered.

Brewing ritual

Two to four flowers per cup, water just off the boil, four to six minutes. Pairs well with cinnamon or a little black pepper.
